Good easy to make food is a big part of my daily lifestyle. This is one of my yummy favorites. Perfect served hot or cold .
SUPER EASY- Julie's Greek Chicken
*Roast 1 chicken in a big baking dish. Surround with cherry tomatoes, chopped onions and chopped bell peppers . Slather all with olive oil and roast with tin foil for 1 3/5 hours at 400 degrees. Remove the tin foil the last 1/2 hour of roasting.
*Boil tube style noodles. You will need about 3 cups noodles or ( when done ).
*Cut kalamata olives ( in half )
*Remove chicken meat from bones when it is cool enough to do so. With a slotted spoon remove the veggies from the roasting pan and mix in a large bowl with the chicken
*Add kalamata olives and Feta Cheese, as much as you like.
Add black pepper and salt to taste.
Serve warm the first night. Serve cold night 2 on a bed of spring greens .
Pairs great with pinot grigio wine.

1 roasting chicken
olive oil
kalamata Olives
Feta cheese, crumbled
tube style noodles such as ziti
Cherry tomatoes 1 pint
1 large onion
1 big bell pepper, yellow is nice for color
Salt and pepper
Lettuce such as spring green
